5 Ingredients or Less: Spinach & Goat Cheese Quiche

Busy but a healthy bee I want to be, I don't like to follow long recipes and overstock on ingredients that I may not use for a while. For my 5 ingredient recipes, I don't count; oil & butter, salt & pepper, and water, as all of these I always have and use often.

Spinach & Goat Cheese Quiche

  • Pie crust ~ make it if you love it or buy a pre-made/frozen one (I like the Spelt or Whole Wheat frozen crusts)
  • As if making scrambled eggs, mix together 2 eggs and some milk (an approximate ratio of 1:2)
  • Saute a little onion & garlic, once onion is translucent, add a few handfuls of spinach
  • Add all the goodness into the pie shell
  • Add salt & pepper to the egg & milk mixture and pour over the saute veggies into the shell
  • Crumble some goat cheese over the top and bake (400 degrees F for 20-30 minutes until liquid is cooked and fluffy, and the top of the pie has golden spots)
