
I love quick, easy and healthy meals. My trick? Using only a handful of ingredients or less, per meal or side dish (excluding salt, pepper & other spices). 
You may be wondering, so what is this on my plate?!Burger: mashed Black Beans, Cornmeal, minced Shallots, and diced Tomatoes.
Salad: Arugula, sliced Strawberries, sauteed Pine Nuts and some  Honey  Mustard dressing.
