Crazy for Cranberries
Harvested in the fall, a little red fruit is everywhere especially during this time of year around Thanksgiving. Many of these berries are grown in America and Canada, and can be found fresh, dried or canned, in various food forms including juice, sauce, muffins, scones, and bread. Cranberries that are minimally processed, have high antioxidant levels with phytochemicals that may benefit the immune and cardiovascular systems, as well as reduce urinary tract infections and dental plaque. They consist mostly of water and fiber with of a little bit of several vitamins and minerals including vitamins A, C, K, E, and Manganese. Personally, I love making my own sauce from fresh cranberries by adding just a little bit of water, brown sugar and allspice. And eating it as a side dish or dessert (on top of pudding/yogurt), and spreading the deliciousness in a sandwich/wrap!
