Summer Salads

Summer is here and we have an abundance of fresh vegetables and fruit to choose from our gardens, farmer’s markets and stores. Salads are my favorite during the hot and busy months, as they are cooling, nutritious and satisfying. Here are a few things to try!

1. Begin with a base: mixed greens, spinach or lettuce.
2. Then add any of your favorite veggies: carrots, cucumbers, tomatoes, cauliflower…
3. Add herbs: chives, mint, dill, tarragon…
4. Add a fruit: strawberry, melon, apple, orange…
5. Make a complete protein by adding a seed/nut: sesame, sunflower, pumpkin…

Stop there or add more including crumbling some feta, goat, blue cheese or tofu! And perhaps a dressing or a drizzle of oil & balsamic vinegar. What are your favorite ingredients or combinations?
