5 or Less Ingredients: Vegetable Stir-Fry with Goji Berries

When the weather is nice, I need to be outside playing instead of inside cooking so fast yet nutritious meals are important for us. I rarely follow recipes, as I find measuring tedious and my fridge and pantry are always missing an ingredient or two. In my 5 ingredients or less, oil/butter, onion/garlic, spice(s), water, are not counted as those are all generally in everything I cook for lunch/dinner.

Here is delicious stir-fry I made a couple nights ago from what I had left over in my fridge and freezer.

Into a big frying pan/wok I added some olive oil and the following ingredients in order, sauteing each briefly with a pinch of sea salt.
  • chopped onion & clove of garlic
  • chopped carrots
  • a couple handfuls of frozen green beans and frozen peas
  • cooked brown rice
  • splash of soy sauce and some freshly cracked black pepper
  • topped with a handful of Goji Berries
